Dairy-Free Chocolate Chip Cookies

I have recently started to bake. I've found that the best dairy-free desserts are those that I make myself! I found this chocolate chip cookie recipe on Love Taza and adapted it to fit my dietary restrictions. They were insanely delicious. My whole family ate multiple as did my co-workers. No one could believe they were dairy-free!  

*Recipe below

1 cup dairy-free butter (earth balance is my favorite)
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
1 tsp. soda
2 tsp. baking powder
1/2 tsp. salt
3 1/4 cups flour (give or take a little flour depending on your climate. Just feel it as you go and make sure it’s not sticky.)
1 cup (or more!) dairy-free chocolate chips (chocolate dream are my favorite)

Cream butter. Add in sugars and mix.
Add eggs and vanilla.
Mix the dry ingredients separately in a large bowl. 
Gradually mix into butter/ sugar mixture. 
Add chocolate chips.
Bake at 350 degrees for 8-10 minutes.

Vegan Street Fair

Last weekend my bestie and I went to the Vegan Street Fair on the Upper West Side. It was delicious. I was totally surprised by how many people were there. Who knew vegan food was so popular! I was in heaven- everything available was something I could eat. The highlights of the day were Screamers Pizza and the brownie sundae from Charlie's Brownies. The pizza from Screamers' was the best vegan pizza I've ever had. The faux cheese was delicious. I was so enamored with the faux cheese that I asked Screamers on Instagram where they buy it and they pointed me in the direction of Follow Your Heart vegan cheese. Their faux cheeses are my new obsession. I used Follow Your Heart faux cheese to make mac and cheese twice this week. We also got donuts from Peaceful Provisions which I thought were good but did not live up to the hype. 

The lines at the fair were insanely long, and it was incredibly hot, so we ended up buying VIP passes which enabled us to cut the line at two vendors. It was definitely worth the extra 12 dollars to walk straight up to Screamers and order our pizza slices. The fair has inspired me to eat more vegan food again. Going forward I plan on eating vegan a couple of times a week. 

I can't wait for my next vegan adventure!

I am a sucker for a good sweatsuit. I spotted this NSF ensemble on one of the housewives from Real Housewives of Beverly Hills and I knew I had to have it. I love the distressed details and it is super comfortable. 

See, watching TV can be productive!
